Ingredients:
For Baking / Shallow Frying the Potatoes:
- 5 potatoes, cut into wedges
- 1 tbsp oil
- Salt to taste
For the Chilli Oil:
- 1 tbsp minced garlic
- 1-2 chopped chillies
- 1 tbsp chopped coriander
- Salt & pepper to taste
- 1 tsp chilli flakes
- 1 tsp lemon juice
- 3 tbsp hot oil
Method:
- Preheat the oven to 180°C. Toss the potato wedges with oil and salt. Bake for 30-35 minutes or until golden and crispy. Alternatively, shallow fry in a pan.
- In a bowl, mix the baked potato wedges with the sizzling chili oil.
- Serve with spicy mayo.
Pizza Corn Pops
Ingredients:
For the Pizza Sauce:
- 2 tbsp pizza sauce
- 1 tbsp ketchup
- 2 tbsp cheese
- Salt & pepper to taste
- 1 tsp chilli flakes
- 2 tbsp milk
For Boiling the Corn:
- 2 corns, cut into 4 pieces each
- Water
- Milk
- Garlic
- Salt to taste
Process:
- Combine the pizza sauce ingredients in a microwave-safe bowl and microwave for 30 seconds.
- Boil the corn in a pressure cooker with water, milk, garlic, and salt until tender.
- Make a slit at the bottom of each corn piece and insert a toothpick or ice cream stick.
- Apply the pizza sauce to the corn and top with basil. Enjoy!
