Sizzling Chili Oil Potato Wedges

Ingredients:

For Baking / Shallow Frying the Potatoes:

  • 5 potatoes, cut into wedges
  • 1 tbsp oil
  • Salt to taste

For the Chilli Oil:

  • 1 tbsp minced garlic
  • 1-2 chopped chillies
  • 1 tbsp chopped coriander
  • Salt & pepper to taste
  • 1 tsp chilli flakes
  • 1 tsp lemon juice
  • 3 tbsp hot oil

Method:

  1. Preheat the oven to 180°C. Toss the potato wedges with oil and salt. Bake for 30-35 minutes or until golden and crispy. Alternatively, shallow fry in a pan.
  2. In a bowl, mix the baked potato wedges with the sizzling chili oil.
  3. Serve with spicy mayo.

Pizza Corn Pops

Ingredients:

For the Pizza Sauce:

  • 2 tbsp pizza sauce
  • 1 tbsp ketchup
  • 2 tbsp cheese
  • Salt & pepper to taste
  • 1 tsp chilli flakes
  • 2 tbsp milk

For Boiling the Corn:

  • 2 corns, cut into 4 pieces each
  • Water
  • Milk
  • Garlic
  • Salt to taste

Process:

  1. Combine the pizza sauce ingredients in a microwave-safe bowl and microwave for 30 seconds.
  2. Boil the corn in a pressure cooker with water, milk, garlic, and salt until tender.
  3. Make a slit at the bottom of each corn piece and insert a toothpick or ice cream stick.
  4. Apply the pizza sauce to the corn and top with basil. Enjoy!
