Fruit Cocktail Pudding

Ingredients:

  • 1/2 sponge cake (cut into thin slices)
  • 1 large tin of fruit cocktail
  • 1/2 liter milk
  • 2 tablespoons sugar
  • 3 tablespoons custard powder
  • 250 grams Amul cream (or any heavy cream)
  • 2 tablespoons jam
  • 7-8 almonds
  • 4 tablespoons sugar
  • Pineapple slices and cherries (for decoration)

Instructions:

  1. Prepare Custard:
    • In a saucepan, heat the milk over medium heat.
    • In a small bowl, mix the custard powder and sugar with a little milk to form a smooth paste.
    • Once the milk is hot but not boiling, pour the custard mixture into the saucepan while stirring continuously.
    • Keep stirring until the custard thickens. Once thickened, remove from heat and let it cool down.
  2. Prepare Praline:
    • In a pan, dry roast the almonds until they are slightly browned. Let them cool.
    • In the same pan, add sugar and melt it on medium heat until it caramelizes.
    • Once the sugar has caramelized and turned golden brown, add the almonds and mix well.
    • Pour the mixture onto a greased plate or tray and let it cool completely. Once cooled, break it into small pieces to make praline.
  3. Assemble the Pudding:
    • Layer the thin sponge cake slices in a rectangular bowl.
    • Drizzle the cake slices with the syrup from the fruit cocktail tin to moisten them.
    • Spread a thin layer of jam over the moistened cake slices.
    • Pour the cooled custard over the jam layer, spreading it evenly.
    • Drain the fruit cocktail from the tin and cut the fruits into small pieces if necessary.
    • Spread the fruit cocktail pieces evenly over the custard layer.
    • Whip the cream until stiff peaks form. If desired, sweeten the cream with a little sugar.
    • Spread the whipped cream over the fruit layer, covering it completely.
    • Decorate the top with pineapple slices and cherries.
    • Sprinkle the prepared praline over the cream layer.
    • Chill the pudding in the refrigerator for at least 2 hours before serving.
  4. Serve:
    • Once chilled, slice and serve your delicious Fruit Cocktail Pudding as a delightful dessert!
