Ingredients:

  • 1 cup dried chickpeas (white chana)
  • Salt to taste
  • 3-4 onions, sliced lengthwise
  • 2 green chilies, chopped and slit
  • 2-inch piece of ginger, julienned
  • 3-4 tomatoes, crushed
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds (jeera)
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder (dhaniya)
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chat masala
  • 1/2 teaspoon cumin powder (jeera powder)
  • 1/2 teaspoon chana masala
  • 1 large lemon, juiced

Instructions:

  1. Rinse the dried chickpeas (chana) thoroughly and soak them in water overnight or for at least 8 hours.
  2. After soaking, drain the water and transfer the chickpeas to a pressure cooker. Add salt to taste and enough water to cover the chickpeas. Pressure cook for about 15-20 minutes or until the chickpeas are tender.
  3. In a kadai or large skillet, heat oil over medium heat. Add cumin seeds (jeera) and let them splutter.
  4. Add the sliced onions and julienned ginger to the kadai. Sauté until the onions turn golden brown.
  5. Once the onions are caramelized, add the crushed tomatoes and chopped green chilies to the kadai. Cook until the tomatoes are soft and mushy, stirring occasionally.
  6. Add red chili powder, coriander powder (dhaniya), garam masala, chat masala, cumin powder (jeera powder), and chana masala to the onion-tomato mixture. Mix well and cook for another 2-3 minutes to allow the spices to blend together.
  7. Add the cooked chickpeas (chana) to the kadai and mix until well combined with the masala mixture. Cook for an additional 5-7 minutes, stirring occasionally, allowing the flavors to meld together.
  8. Once the chana masala is cooked to your desired consistency and flavor, squeeze the juice of one large lemon over the dish. Mix well to incorporate the lemon juice evenly.
  9. Remove the kadai from the heat and transfer the spicy dry chana masala to a serving dish.
  10. Serve the delicious dry chana masala hot with bhatura, laccha parantha, or naan. Enjoy the flavorful and aromatic dish as a hearty meal or as a side dish to complement your main course.
