Ingredients:
- 1 cup dried chickpeas (white chana)
- Salt to taste
- 3-4 onions, sliced lengthwise
- 2 green chilies, chopped and slit
- 2-inch piece of ginger, julienned
- 3-4 tomatoes, crushed
- 2 tablespoons oil
- 1 teaspoon cumin seeds (jeera)
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder (dhaniya)
- 1/2 teaspoon garam masala
- 1/2 teaspoon chat masala
- 1/2 teaspoon cumin powder (jeera powder)
- 1/2 teaspoon chana masala
- 1 large lemon, juiced
Instructions:
- Rinse the dried chickpeas (chana) thoroughly and soak them in water overnight or for at least 8 hours.
- After soaking, drain the water and transfer the chickpeas to a pressure cooker. Add salt to taste and enough water to cover the chickpeas. Pressure cook for about 15-20 minutes or until the chickpeas are tender.
- In a kadai or large skillet, heat oil over medium heat. Add cumin seeds (jeera) and let them splutter.
- Add the sliced onions and julienned ginger to the kadai. Sauté until the onions turn golden brown.
- Once the onions are caramelized, add the crushed tomatoes and chopped green chilies to the kadai. Cook until the tomatoes are soft and mushy, stirring occasionally.
- Add red chili powder, coriander powder (dhaniya), garam masala, chat masala, cumin powder (jeera powder), and chana masala to the onion-tomato mixture. Mix well and cook for another 2-3 minutes to allow the spices to blend together.
- Add the cooked chickpeas (chana) to the kadai and mix until well combined with the masala mixture. Cook for an additional 5-7 minutes, stirring occasionally, allowing the flavors to meld together.
- Once the chana masala is cooked to your desired consistency and flavor, squeeze the juice of one large lemon over the dish. Mix well to incorporate the lemon juice evenly.
- Remove the kadai from the heat and transfer the spicy dry chana masala to a serving dish.
- Serve the delicious dry chana masala hot with bhatura, laccha parantha, or naan. Enjoy the flavorful and aromatic dish as a hearty meal or as a side dish to complement your main course.
