Cheesy Masala Baby Potatoes

1. Cheesy Masala Baby Potatoes

Ingredients:

  • 3 tbsp oil
  • 20-25 par-boiled baby potatoes
  • 1/4 tsp turmeric
  • 1 tbsp cumin powder
  • 1 tbsp red chili powder
  • Salt and pepper to taste
  • Cheese (grated)
  • Mixed herbs and chili flakes (for garnish)

Instructions:

  1. Heat oil in a large pan over medium heat.
  2. Add the par-boiled baby potatoes and sauté for a few minutes until they start to get slightly crispy.
  3. Add turmeric, cumin powder, red chili powder, salt, and pepper. Mix well to coat the potatoes evenly.
  4. Continue to cook for another 5-7 minutes until the potatoes are well-cooked and crispy.
  5. Sprinkle grated cheese over the potatoes and cover the pan. Let the cheese melt.
  6. Garnish with mixed herbs and chili flakes.
  7. Serve hot and enjoy!

2. Masala Bread Sandwich

Aloo Masala Ingredients:

  • 2 boiled potatoes, mashed
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tbsp fresh coriander, chopped
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • A pinch of turmeric
  • 1/2 tsp amchur (dry mango) powder

Masala Bread Ingredients:

  • 1 tbsp butter
  • 1 tsp red chili powder
  • 1 tsp pav bhaji masala
  • 1/2 tsp jeera (cumin) powder
  • 1 tsp fresh coriander, chopped
  • Bread slices

Instructions:

  1. Prepare the Aloo Masala:
    • In a bowl, mix the mashed potatoes, chopped onion, green chilies, coriander, red chili powder, coriander powder, turmeric, and amchur powder.
    • Mix well until all ingredients are combined.
  2. Prepare the Masala Bread:
    • In a small bowl, mix the butter with red chili powder, pav bhaji masala, jeera powder, and fresh coriander.
  3. Assemble the Sandwich:
    • Spread a generous amount of the prepared masala butter on one side of each bread slice.
    • Spread the aloo masala mixture on the non-buttered side of one bread slice.
    • Place another slice of bread on top, buttered side up.
  4. Cook the Sandwich:
    • Heat a pan over medium heat and place the sandwich on it.
    • Cook until the bread is golden brown and crispy on both sides.
    • Remove from the pan, cut into halves or quarters, and serve hot.

3. Chilli Cheese Corn

Ingredients:

  • 1 cup corn kernels (fresh or frozen)
  • 2 tbsp butter
  • 2 green chilies, finely chopped
  • 1/2 cup grated cheese (cheddar or any preferred cheese)
  • Salt and pepper to taste
  • Chopped fresh coriander for garnish

Instructions:

  1. Heat butter in a pan over medium heat.
  2. Add the corn kernels and sauté for 2-3 minutes.
  3. Add the chopped green chilies and continue to sauté for another 2 minutes.
  4. Season with salt and pepper to taste.
  5. Add the grated cheese and mix well until the cheese melts and coats the corn.
  6. Garnish with chopped fresh coriander.
  7. Serve hot.

4. Pizza Potato Stacks

Ingredients:

  • Potato slices (cut into 1/4-inch thick rounds)
  • Pizza sauce
  • Grated cheese (mozzarella or any preferred cheese)
  • Mixed herbs (such as oregano, basil)
  • Toothpicks

Instructions:

  1. Preheat the air fryer or oven to 180°C (350°F).
  2. Lay out the potato slices. Spread a thin layer of pizza sauce on each slice.
  3. Top with grated cheese and a sprinkle of mixed herbs.
  4. Stack three potato slices together, securing the stack with a toothpick.
  5. Place the stacks in the air fryer or on a baking sheet if using an oven.
  6. Air fry or bake for 6-8 minutes, or until the potatoes are cooked through and the cheese is melted and bubbly.
  7. Remove the toothpicks and serve hot.
