Ingredients:
- 1 red bell pepper, charred on the stove top and skin removed (place in a bowl and cover after charring to make peeling easier)
- 3 tbsp cashews, soaked in hot water
- 3 Kashmiri dry red chilies, soaked in the same hot water
- 50g paneer
- 2 cloves garlic, chopped
- 1/2 tsp paprika or Kashmiri red chili powder (optional)
- 1-2 tbsp water (or more, depending on desired consistency) or 2 tbsp Greek yogurt
- Salt to taste
- A pinch of pepper
- 1/2 tsp pizza seasoning
- 1 tbsp olive oil
Method:
- Blend the charred red bell pepper, soaked cashews, soaked Kashmiri chilies, paneer, garlic, paprika or chili powder (if using), water or Greek yogurt, salt, pepper, pizza seasoning, and olive oil until smooth.
- Taste and adjust the seasonings as needed.
- Refrigerate for an hour to allow the dip to thicken and set.
- Serve with salads, sandwiches, wraps, or use as a dip.
