Ingredients:

  • Half a packet of spaghetti
  • 3 onions, chopped lengthwise
  • 1 capsicum, chopped lengthwise
  • 2 tomatoes, grated
  • 1 cup milk
  • 2 tbsp pizza pasta sauce
  • 3 tbsp grated cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Cook the Spaghetti:
    • Boil a large pot of water.
    • Add a pinch of salt and the spaghetti to the boiling water.
    • Cook according to the package instructions until al dente.
    • Drain and set aside.
  2. Prepare the Vegetables:
    • In a large pan, heat olive oil over medium heat.
    • Add chopped onions and sauté until translucent.
    • Add chopped capsicum and continue to sauté until the vegetables are tender.
  3. Add Tomatoes and Sauce:
    • Grate the tomatoes directly into the pan, discarding the skins.
    • Stir in pizza pasta sauce and cook for a few minutes until the tomatoes are well incorporated.
  4. Make the Sauce:
    • Pour in the milk, stirring continuously to create a creamy sauce.
    • Allow the mixture to simmer on low heat until the sauce thickens slightly.
    • Season with salt and pepper to taste.
  5. Combine Spaghetti and Sauce:
    • Add the cooked spaghetti to the pan with the vegetable and sauce mixture.
    • Toss everything together until the spaghetti is evenly coated with the creamy sauce.
  6. Cheese Topping:
    • Sprinkle the grated cheese over the spaghetti.
    • Cover the pan with a lid and let it sit on low heat until the cheese melts and forms a gooey topping.
  7. Serve:
    • Once the cheese has melted, give the spaghetti a final toss.
    • Garnish with fresh basil leaves if desired.
