Curd Rice

Ingredients:

  • Main:
    • 1 cup Boiled rice
    • 2 tbsp Milk
    • 1/2 cup Curd (yogurt)
  • Seasonings:
    • 1/4 tsp Black pepper
    • Salt to taste
    • 1/4 tsp Red chili powder
    • 2-3 Roasted cashews
  • For Tadka (Tempering):
    • 1 tsp Rai (mustard seeds)
    • 1 tbsp Chana dal (soaked)
    • 4-5 Curry leaves

Instructions:

  1. Prepare the Rice:
    • Cook the rice until soft and let it cool slightly.
  2. Mix with Dairy:
    • In a mixing bowl, combine the boiled rice with milk and curd. Adjust the amount of curd and milk to achieve a creamy consistency.
  3. Seasoning:
    • Add salt, black pepper, and red chili to taste. Mix well.
  4. Tadka (Tempering):
    • Heat a small amount of oil in a pan.
    • Add rai (mustard seeds) and let them splutter.
    • Add soaked chana dal and fry until golden brown.
    • Add curry leaves and sauté briefly.
  5. Combine:
    • Pour the tadka over the curd rice mixture.
    • Mix gently to ensure the tadka is evenly distributed.
  6. Garnish:
    • Top with roasted cashews.
  7. Serve:
    • Serve the curd rice chilled or at room temperature.
