Chickpea Salad Recipe

Ingredients:

  • 2 cups boiled chickpeas (white chana)
  • 1 cucumber, diced
  • 1 medium onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • 2 tablespoons lime juice
  • 1/4 cup fresh coriander (cilantro), chopped

Instructions:

  1. Prepare the Ingredients:
    • If not already done, boil the chickpeas until tender and drain them.
    • Dice the cucumber and tomatoes into small pieces.
    • Finely chop the onion.
    • Chop the fresh coriander.
  2. Mix the Salad:
    • In a large mixing bowl, combine the boiled chickpeas, diced cucumber, chopped onion, and diced tomatoes.
  3. Add the Dressing:
    • Drizzle the olive oil over the mixed ingredients.
    • Add salt, black pepper, and lime juice to the bowl.
  4. Toss the Salad:
    • Gently toss all the ingredients together until they are evenly coated with the dressing.
  5. Add Fresh Coriander:
    • Sprinkle the chopped coriander over the salad and give it one final toss.
  6. Serve:
    • Serve immediately for the best flavor and freshness.
