Ingredients:
- 2 tsp oil
- 1 tsp minced garlic
- 1 tsp minced ginger
- 2 tsp chopped onions
- 1-2 cups water
- 1 tsp soy sauce
- 1 tsp vinegar
- 2 tsp red chili paste or Schezwan chutney
- Salt to taste
- 1 tsp aromatic powder (like five-spice powder)
- 2-3 tsp sweetcorn
- 7-8 mushrooms, sliced
- Some tofu, cubed
- Instant noodles
- Toasted sesame seeds
- Chopped green onions
Method:
- Heat the oil in a pot over medium heat. Add the garlic, ginger, and onions, and sauté until the onions start to turn golden.
- Add the water, soy sauce, vinegar, red chili paste or Schezwan chutney, salt, and aromatic powder. Mix well.
- Add the sweetcorn, mushrooms, and tofu to the pot. Let it boil until the mushrooms are cooked.
- Strain out the vegetables and set them aside.
- In the same water, boil the instant noodles according to the package instructions.
- Assemble the noodles in a bowl, top with the cooked vegetables, and finish with toasted sesame seeds and chopped green onions.
