Quick Vegetarian Ramen Bowl

Ingredients:

  • 2 tsp oil
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 2 tsp chopped onions
  • 1-2 cups water
  • 1 tsp soy sauce
  • 1 tsp vinegar
  • 2 tsp red chili paste or Schezwan chutney
  • Salt to taste
  • 1 tsp aromatic powder (like five-spice powder)
  • 2-3 tsp sweetcorn
  • 7-8 mushrooms, sliced
  • Some tofu, cubed
  • Instant noodles
  • Toasted sesame seeds
  • Chopped green onions

Method:

  1. Heat the oil in a pot over medium heat. Add the garlic, ginger, and onions, and sauté until the onions start to turn golden.
  2. Add the water, soy sauce, vinegar, red chili paste or Schezwan chutney, salt, and aromatic powder. Mix well.
  3. Add the sweetcorn, mushrooms, and tofu to the pot. Let it boil until the mushrooms are cooked.
  4. Strain out the vegetables and set them aside.
  5. In the same water, boil the instant noodles according to the package instructions.
  6. Assemble the noodles in a bowl, top with the cooked vegetables, and finish with toasted sesame seeds and chopped green onions.
